SEVILLENCA VARIETY (Baix Ebre – Montsià PDO)

SEVILLENCA

The precocity of entry into production is medium, with an average productivity and a little alternating of production among consecutive years. Variety not rustic (low-resistant). Sensitive to drought and medium frost resistance. Sensitive to fly-attack that spawn explosively and cause severe damage.

Sensory profile

Medium-fruity green oil of great aromatic complexity, with ripe notes (apple, banana and strawberry) and vegetables (fennel, anise, almond, mowed grass). Sweet and almond in the mouth, it is an excellent base oil for blends or coupages. Its low stability limits marketing to distant markets as requires extreme storage conditions. Oil very suitable for cooking if you are looking for a “non-dominant” profile oil.

Place associated with the variety: Dry stone shacks.

Dry stone constructions by shelter, between two and three meters in circular plan. We can find it mainly in the mountains. Declared Intangible Cultural World’s Heritage by UNESCO.
